Trial By Fire: From Porter to Chef… Mojo’s top staffer yearns for lamb chops & scalloped potatoes?

Carl from Inch Marlow, Christ Church is a born and bred Bajan.

He started his career as a porter at the ripe old age of 19 at Coconut Court Hotel, where he trained for 5 years working his way up the ladder to a Line Cook. Carl then joined Daniel O’Shea‘s team at the Allamanda Hotel as a Chef, helping Danny out with his famous Sunday Roasts for 4 years. From the Allamanda, Carl joined Danny again as a Chef at MOJO in 2011 and quickly worked his way up to the position of Kitchen Supervisor within a year.

Carl’s life ambition is to own his own restaurant one day specialising in International Cuisine. He favours working with meat and therefore enjoys the heat of the grill in the CBK kitchen. Carl has only ever taken his birthday off in all the years he has worked for CBK. His hard work and dedication is beyond admirable…


Carl’s ideal day off (when not cooking CBK delights) would consist of a day at the beach munching on BBQ lamb with scalloped potatoes; followed by strawberry cheesecake all washed down with an ice-cold Heineken!
